Sometimes a mom just needs a bit of pampering and chill time. Granted, that time may only last for a few minutes, but it’s important! One of my favorite ways to treat myself is with a specialty coffee – one that I don’t have to drive to a coffee shop and pay for. This Toasted Coconut Honey Latte is easy to make and fits the bill!

Toasted Coconut Honey Latte
There’s just something about a specialty coffee that feels…I don’t know, special. Like you actually want to take a few minutes extra to sip it and relax.
And when life doesn’t offer you those extra few minutes, the flavors of this latte will help you deal with whatever comes your way!
Ingredients
4 cups of strong coffee
1 cup of half n half
1/3 cup of honey
2 Tablespoons of coconut extract
6 teaspoons of sugar – or substitute if desired
Whipped cream – to top
Toasted coconut – to top

Instructions
Place the coffee in a heavy saucepan, and over low heat, add the half n half, honey, coconut extract, and sugar. Stir all ingredients together, and heat through.
Pour the Latte into coffee mugs and top with whipped cream and toasted coconut. Serve, and Enjoy!
NOTE: You can buy toasted coconut on the baking isle, or toast your own by placing shredded coconut on a parchment lined cookie sheet and placing it in the oven at 350 for about 10 minutes, or until it’s golden brown. Let it cool before placing it on the whipped cream or it will melt.
